Bar-B-Q Chicken Salad
Wondering what to do with that leftover Bar-B-Q Chicken ?
Use Carol’s soon to be famous Bar-B-Q Chicken Salad recipe of course.
  1. Take 3 of your leftover previously Bar-B-Q’d chicken breasts and cut into small cubes.
  2. Add 1/2 cup coarsely chopped celery and 1/2 to 3/4 cup Kraft real mayo.
  3. Mix all ingredients, salt and pepper to taste, and serve on toasted bread or atop a bed of lettuce.
  4. Now I like to add just a spoonful or two of Sauce King of Chicago Sauce to the mix just to zip up the color and taste a bit, but that’s just me, the King that is.
Guacamole
Sauce King of Chicago style (a.k.a. Bar-B-Guac)
  1. Take 3 ripe (soft but not too soft) avocados, peel and mash them up.

  3. Add 1/4 cup Sauce King of Chicago (or to taste, start small and add slowly).
  4. Mix all ingredients, chill, and enjoy with tortilla chips.
Here's another appetizer recipe...
from Gerrie in Joliet, Illinois
I have one for you...a variation on the rib recipe.  Here's what I do.  I buy those little riblets from the grocery store, or if they don't have any I have the butcher cut baby back ribs in half the LONG way, so I end up with small ribs.  I put those long small ribs in the oven for about 30 minutes and then I take them out and cut them into individual rib pieces and put them in a crock-pot.  Then you pour a whole bottle of sauce over them and let them do their thing in the crock-pot for a couple hours stirring occasionally.  Well, let me tell you, after a few hours you have the best tasting, most tender little appetizers you could ever hope to have.  These have always been a hit wherever I have taken them and they are so easy.  I only do easy.  And also good the next day if there's any left over, which is rare.  Try it sometime...they'll be a hit.
